Squash sauce pizza with apple slices |
1. Roast a squash of your choice (see instructions), which will take 45-60 minutes.
2. While you have the oven on, peel a couple cloves of garlic and wrap in foil with a drizzle of olive oil; roast the garlic for 10-15 minutes until soft and fragrant.
3. Remove the squash from the oven and let cool, then measure 1 1/2 cups (375 mL) into the bowl of a food processor.*
4. Add roasted garlic, 2 Tbsp (30 mL) olive oil, and 1/2 tsp (2 mL) salt.
5. Pulse to purée the squash and incorporate the garlic, oil, and salt. Add 1 or 2 Tbsp (15 to 30 mL) water if needed to achieve a spreadable consistency.
6. Use in place of tomato sauce for pizza, ideally topping with thin slices of apple and Parmesan (or blue) cheese.
* If you don't have a food processor, mixing the ingredients in a bowl with a potato masher or a fork (and a strong arm) probably would work pretty well. And you might have some luck with a hand-held blender/mixer if the squash is very soft.
