Duck Eggs for Dinner

Duck eggs are usually bigger than chicken eggs
You won't find them in most grocery stores but that doesn't mean you should shy away from trying duck eggs!

Statistics:
  • The average duck egg has 130 calories, 9.5 grams of fat and 9 grams of protein.
  • An extra large jumbo chicken egg (which is about the same size as a duck egg) has 90 calories, 6 grams of fat and 8 grams of protein.
Despite their differences, swapping 1 duck egg for 1 extra-large (or jumbo) chicken egg usually works in most recipes. According to Linda Dick, a United Kingdom duck farmer, "Generally anything you can do with hen's eggs can also be done with duck eggs." In fact, she admits, "now [we] never use hen's eggs given the choice." Some of her recipes can be found here.
