Duck eggs are usually bigger than chicken eggs |
You won't find them in most grocery stores but that doesn't mean you should shy away from trying duck eggs!
Statistics:
- The average duck egg has 130 calories, 9.5 grams of fat and 9 grams of protein.
- An extra large jumbo chicken egg (which is about the same size as a duck egg) has 90 calories, 6 grams of fat and 8 grams of protein.
Despite their differences, swapping 1 duck egg for 1 extra-large (or jumbo) chicken egg usually works in most recipes. According to Linda Dick, a United Kingdom duck farmer, "Generally anything you can do with hen's eggs can also be done with duck eggs." In fact, she admits, "now [we] never use hen's eggs given the choice." Some of her recipes can be found here.
