Zucchini Becomes Muffins

With a little help from a can of pineapple, Recipe of the Week #8 shows how you can transform half a large zucchini into 18 tasty muffins, which are relatively healthy if you use whole wheat flour to make them. Delicious warm with a little butter when they're right out of the oven, however, they also freeze well.

Cooking tip: If you grate the zucchini in a food processor, the batter comes together quite quickly and easily.
