Just got the list of box contents for Thursday from Adam and everyone (
at least everyone who filled out our survey and told us that they love beets) should be happy that this week we're all getting
RED beets. So if you still have last week's
YELLOW beets kicking around in the fridge, I highly recommend roasting both (separately, so the colours don't bleed together) and making a salad that shows off their contrasting shades. The last time I made such a salad, my dad thought it was so pretty he decided to take a picture.
Besides beautiful
Beets, you can also expect:
Scallions,
Spinach,
Potatoes,
Kale,
Head Lettuce,
Turnips,
Rutabaga, and
Garlic Scapes.
